Ingredients

  • cup corn kernels yellow canned rinsed
  • servings knudsen cream sour for serving
  • Tbsp cilantro leaves fresh chopped
  • clove garlic minced
  • tsp grapeseed oil 
  • tsp juice of lime fresh
  • 18 oz ready made polenta log sliced in triangles or rounds
  • large bell pepper red chopped
  • pinch salt to taste
  • 0.8 cup beans white canned cooked

Directions

  1. COMBINE bell pepper, corn kernels, cilantro, white beans, garlic and lime juice in a small bowl. Season with salt and cover.
  2. Let stand to blend flavors; approximately 15 minutes.
  3. HEAT oil in a medium frying pan over low-medium heat.
  4. Add polenta slices and fry on both sides until golden.
  5. ARRANGE polenta on plate and top with bean salsa and dollops of sour cream.
