Ingredients
- 0.3 teaspoon pepper black
- 4 cups brown rice long-grain cooked
- 1.5 cups daikon radish thinly sliced
- 4 large eggs lightly beaten
- 0.3 cup basil leaves fresh
- 0.3 cup cilantro leaves fresh chopped
- 0.3 cup mint leaves fresh
- 2 garlic cloves minced
- 4 lime wedges
- 3 tablespoons vegetable oil; peanut oil preferred divided
- 0.3 teaspoon salt
- 1 serrano chile chopped
- 3 shallots finely chopped

Directions
- Heat 1 tablespoon oil in a large skillet over medium-high heat; swirl to coat.
- Pour eggs into pan; cook for 2 minutes or until set, stirring once.
- Remove eggs from pan.
- Increase heat to high, and add the remaining 2 tablespoons oil to pan.
- Add shallots, garlic, and chile; stir-fry 1 minute.
- Add rice; stir-fry for 3 minutes or until lightly browned.
- Add cooked eggs, soy sauce, salt, and pepper; toss to combine.
- Top with radish and herbs, and serve with lime.

- /4 cup lower-sodium soy sauce
- /4 cup packed dark brown sugar
- Bring soy sauce and brown sugar to a boil in a small saucepan over medium heat. Simmer 2 minutes or until reduced to 1/4 cup.
