  • 0.3 teaspoon pepper black
  • cups brown rice long-grain cooked
  • 1.5 cups daikon radish thinly sliced
  • large eggs lightly beaten
  • 0.3 cup basil leaves fresh
  • 0.3 cup cilantro leaves fresh chopped
  • 0.3 cup mint leaves fresh
  •  garlic cloves minced
  •  lime wedges 
  • tablespoons vegetable oil; peanut oil preferred divided
  • 0.3 teaspoon salt 
  •  serrano chile chopped
  •  shallots finely chopped

Directions

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat; swirl to coat.
  2. Pour eggs into pan; cook for 2 minutes or until set, stirring once.
  3. Remove eggs from pan.
  4. Increase heat to high, and add the remaining 2 tablespoons oil to pan.
  5. Add shallots, garlic, and chile; stir-fry 1 minute.
  6. Add rice; stir-fry for 3 minutes or until lightly browned.
  7. Add cooked eggs, soy sauce, salt, and pepper; toss to combine.
  8. Top with radish and herbs, and serve with lime.
  9. Sweet Soy Sauce
  10. /4 cup lower-sodium soy sauce
  11. /4 cup packed dark brown sugar
  12. Bring soy sauce and brown sugar to a boil in a small saucepan over medium heat. Simmer 2 minutes or until reduced to 1/4 cup.
  13. Makes 4 servings (serving size: 1 tablespoon)
