Suggestions

If you’re looking for a side dish that feels refreshing, elegant, and just a little unexpected, this Frozen Iceberg Salad with Champagne Vinegar is a true gem. It takes the humble iceberg lettuce and transforms it into something crisp, cool, and delightfully sophisticated. By freezing the lettuce, you create a unique texture that makes every bite extra crunchy and invigorating—perfect for hot days or when you want to surprise your guests with something different.

The dressing is a simple yet refined blend of Dijon mustard, champagne vinegar, and extra-virgin olive oil, lifted with the aromatic touch of fresh tarragon. This combination brings a balance of tang, creaminess, and herbal brightness that pairs beautifully with the chilled lettuce. It’s proof that minimal ingredients, when chosen thoughtfully, can deliver maximum flavor.

Not only is this recipe vegan, gluten-free, and dairy-free, but it also fits into a low FODMAP lifestyle, making it accessible to a wide range of dietary needs. With only 86 calories per serving, it’s light yet satisfying, ideal as a starter, antipasti, or even a refreshing snack. The preparation is simple, but the presentation feels gourmet—making it a wonderful choice for dinner parties or casual gatherings where you want to impress without spending hours in the kitchen.

Serve it immediately after drizzling on the dressing, and you’ll have a crisp, cool salad that’s as visually striking as it is delicious. It’s a modern twist on a classic ingredient, and once you try it, you’ll wonder why you haven’t frozen lettuce before!
