Imagine transforming a classic dessert into a delightful frozen treat that feels both elegant and refreshingly light, perfect for a summer gathering or a sophisticated dinner party. This Frozen Key Lime Soufflé with Raspberry Sauce is a true culinary masterpiece that masterfully balances the tart, zesty brightness of key limes with the rich, creamy indulgence of heavy whipping cream and honey. What sets this recipe apart is its impressive versatility; it is naturally gluten-free and vegetarian, making it an accessible choice for guests with dietary restrictions without compromising on flavor or texture.

The secret to its success lies in the methodical preparation that mimics the airy lift of a traditional soufflé, yet retains a smooth, mousse-like consistency that is incredibly easy to enjoy. By using wax paper collars to guide the mixture as it rises during freezing, you ensure a perfect, tall presentation that looks as impressive as it tastes. The flavor profile is a symphony of citrus notes enhanced by the subtle sweetness of honey, while the addition of fresh raspberries on top provides a beautiful pop of color and a burst of natural fruitiness that contrasts beautifully with the creamy base.

Paired with a luscious raspberry sauce made from both fresh and thawed frozen berries, this dessert offers layers of complexity in every bite. The sauce, strained to perfection, drizzles elegantly over the chilled soufflé, creating a visual and taste experience that is hard to resist. With a ready time of just 45 minutes, you can spend your evening hosting rather than standing over a stove, as the real magic happens in the freezer overnight. At 615 calories per serving, it is a satisfying treat that feels indulgent yet balanced, making it an ideal side dish or light dessert that will leave your guests asking for seconds.

Ingredients

  •  egg yolks
  • cups heavy whipping cream
  • 0.5 cup honey
  • cup key lime juice
  • teaspoon lime rind grated
  • pint raspberries fresh
  • 10 ounce raspberries frozen thawed
  • 0.3 teaspoon salt
  • 1.5 cups sugar
  • 0.5 cup butter unsalted
  •  eggs whole

Equipment

  • whisk
  • blender
  • ramekin
  • double boiler
  • wax paper

Directions

  1. Fold wax paper to create a 1 1/2-inch-wide collar for each of 8 (6-ounce) ramekins. Wrap paper collars around the outside of the ramekins, allowing 1 inch or more to extend above the rim; tape to secure. Set ramekins aside.
  2. Melt butter in top of a double boiler; stir in rind and next 3 ingredients.
  3. Whisk together yolks and whole eggs, and stir into juice mixture. Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon. Cool completely.
  4. Whip the cream, and fold gently into cooled lime mixture. Spoon mixture into prepared ramekins. (
  5. Mixture will extend up the sides of the collars.) Arrange fresh raspberries on top. Freeze 8 hours or overnight.
  6. Combine thawed raspberries and honey in a blender; strain to remove seeds.
  7. Remove the paper collars, and drizzle souffls with raspberry sauce.
