Ingredients

  • cups rice cooked
  • 0.3 teaspoon pepper red crushed
  • 0.5 cup cranberries dried
  • cup less-sodium chicken broth fat-free
  •  garlic cloves finely chopped
  • teaspoon ground coriander 
  • 0.5 teaspoon ground cumin 
  • teaspoon ground ginger 
  • small onion chopped
  • ounce pineapple chunks in juice drained canned
  • 16 ounce pork loin cutlets 
  • 0.5 teaspoon salt 
  • 0.5 cup tomatoes chopped
  • teaspoon turmeric 
  • teaspoons vegetable oil

Directions

  1. Place a large nonstick skillet over mediumhigh heat; add first 5 ingredients. Cook, stirring constantly, 1 minute or until fragrant.
  2. Remove from pan, and set aside.
  3. Heat oil in same pan over medium-high heat.
  4. Add pork, and cook 2 minutes on each side or until pork is browned; place on a plate, and set aside. Coat pan with cooking spray; place over medium-high heat until hot.
  5. Add onion and garlic; saut 3 to 4 minutes or until tender.
  6. Add toasted spices, broth, cranberries, salt, and pineapple; stir constantly until mixture comes to a boil.
  7. Return pork to pan; reduce heat, and simmer 15 minutes or until pork is tender. Stir in tomato, and cook 1 minute.
  8. Place rice on each of 4 plates; top with pork cutlets and sauce.
