Ingredients

  • 16  apricot halves dried
  • pound chicken breast tenders 
  • teaspoon olive oil 
  • tablespoon moroccan seasoning salt-free
  • 0.5 cup cup heavy whipping cream fat-free sour reduced-fat (do not use cream)

Directions

  1. Sprinkle seasoning evenly over chicken. Coat a large nonstick skillet with cooking spray; add oil.
  2. Place over medium-high heat until hot.
  3. Add chicken; cook 3 minutes on each side or until chicken is lightly browned.
  4. While chicken cooks, cut apricot halves into slivers.
  5. Place in a glass measure; add water to cover. Cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 2 minutes; drain well.
  6. Remove chicken from heat; stir in apricots and sour cream.
  7. Serve immediately.
