Ingredients

  • 11 oz mandarin orange segents drained canned
  • 10 oz pineapple crushed drained canned
  • rib celery chopped
  • 0.5 cup coconut or shredded packed toasted
  • 0.5 cup dry-roasted peanuts chopped
  • 1.5 cups mayonnaise light
  • tablespoons juice of lime fresh
  • servings salt and pepper 
  • 24 oz chicken breast halves boneless skinless
  • 0.5 cup cup heavy whipping cream sour
  • tablespoons relish sweet
  • 13.5 oz coconut milk unsweetened canned

Directions

  1. Place chicken in a skillet and season with salt and pepper.
  2. Pour in coconut milk and bring to a boil over high heat. (
  3. Add water, if necessary, to cover chicken.) Reduce heat to medium-low and simmer, uncovered, until chicken is opaque and firm, 15 minutes.
  4. Transfer chicken to a plate and let cool. Discard coconut milk. When cool enough to handle, shred chicken into small pieces using your fingers.
  5. Blend mayonnaise with sour cream in a medium bowl. Stir in lime juice, relish and celery.
  6. Add chicken, pineapple, oranges and peanuts. Season with salt and pepper. Gently fold to blend and coat ingredients. Refrigerate until ready to serve.
  7. Sprinkle with coconut just before serving.
