  • 28 ounce canned tomatoes crushed canned
  • handful cilantro leaves chopped
  • 0.5 cup coconut milk 
  • teaspoon coriander seeds toasted
  • teaspoon cumin seeds toasted
  • tablespoon garam masala 
  • tablespoon garlic chopped
  • tablespoon ginger grated
  • small chilies diced green finely
  • 24 ounce halibut pieces 
  • tablespoon oil 
  • small onion diced finely
  • servings salt and pepper to taste
  •  batch tomato curry sauce (see below)
  • 0.5 teaspoon turmeric

Directions

  1. Mix the oil, garam masala and turmeric.
  2. Brush the garam masala mixture over the fish and place it in a baking dish and let sit for 20 minutes.Roast the halibut in a preheated 450F oven until cooked, about 10-15 minutes. (White juices will appear on the fish when it is cooked.)Divide the tomato curry sauce between four plates and place a piece of halibut on top.
