  • pounds baking potatoes peeled
  • 0.3 teaspoon pepper black freshly ground
  • 1.5 tablespoons butter 
  • tablespoons canola oil 
  •  garlic clove minced
  • 0.5 teaspoon kosher salt 
  • tablespoons parsley chopped
