  • lb l 6 baking potatoes 
  • teaspoons rosemary dried
  • small cloves garlic minced
  • 0.3 cup olive oil 
  • 0.5 cup parmesan finely grated
  • servings salt and pepper

Directions

  1. Preheat oven to 450F. Scrub potatoes and pat dry. Carefully cut each into 16 thin wedges.
  2. Place wedges in a large bowl.
  3. Pour olive oil over potatoes.
  4. Add salt, pepper, garlic and rosemary and toss to coat.
  5. Place Parmesan in a large bowl; set aside.
  6. Arrange potatoes in a flat layer on 2 large rimmed baking sheets.
  7. Bake, turning once or twice, until lightly browned and soft in center, about 30 minutes.
  8. Remove potatoes from oven and immediately toss with Parmesan in a bowl until coated.
  9. Serve hot.
