Ingredients

  • 0.1 teaspoon pepper black freshly ground
  • 1.5 teaspoons butter 
  • tablespoons cognac 
  • tablespoons wine dry white
  • teaspoons thyme leaves fresh
  • 0.5 cup beef broth fat-free
  • 1.5 teaspoons olive oil extra-virgin
  • 0.3 teaspoon salt 
  • 3.3 pound chicken whole cut into 8 pieces
  • 40  garlic whole peeled ( 4 heads)

Directions

  1. Combine first 3 ingredients in a small bowl.
  2. Discard giblets and neck from chicken. Rinse chicken and pat dry.
  3. Heat oil and butter in a 12-inch nonstick skillet over medium-high heat until butter melts.
  4. Sprinkle chicken pieces evenly with salt and pepper.
  5. Add chicken pieces to pan; cook 2 1/2 minutes on each side or until golden.
  6. Remove chicken from pan; place in a 4-quart electric slow cooker.
  7. Reduce heat to medium.
  8. Add garlic to drippings in pan; saut 1 minute or until garlic begins to brown. Stir in broth mixture, scraping pan to loosen browned bits. Boil 2 minutes or until sauce is reduced to about 1 cup.
  9. Pour sauce over chicken; sprinkle with thyme. Cover and cook on LOW for 4 hours or until chicken is done.
  10. Serve sauce and garlic with chicken.
  11. Garnish with chopped parsley, if desired.
