Ingredients

  • pound baking potatoes peeled coarsely chopped
  • 0.5 cup half-and-half fat-free
  • 1.5 teaspoons rosemary fresh chopped
  •  garlic cloves minced
  • teaspoons olive oil divided
  • 0.3 teaspoon pepper 
  • 0.8 teaspoon salt

Directions

  1. Place potatoes in a large saucepan, and cover with cold water. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until tender.
  2. Drain; wipe pan dry.
  3. Heat 1 teaspoon oil in saucepan over medium- high heat until hot.
  4. Add garlic and rosemary; cook 3 minutes, stirring often.
  5. Add drained potatoes, 1 teaspoon oil, halfand- half, salt, and pepper to garlic mixture.
  6. Place over low heat, and mash with a potato masher.
