Ingredients

  •  cauliflower trimmed cut into florets ( 6 cups)
  • tablespoon parsley fresh minced
  •  garlic cloves minced
  • tablespoon olive oil 
  • 0.5 teaspoon salt 
  • ounce bread light whole wheat farm style (such as Pepperidge Wheat Bread)

  • blender

Directions

  1. Arrange cauliflower in a vegetable steamer. Steam, covered, 8 to 10 minutes or until tender.
  2. Drain well.
  3. Meanwhile, place bread in a food processor or blender; process until fine breadcrumbs form.
  4. Heat oil in a large nonstick skillet over medium heat.
  5. Add garlic; saut 1 to 1 1/2 minutes or until lightly browned. Stir in breadcrumbs; cook, stirring frequently, until browned.
  6. Remove from heat; stir in parsley and salt.
  7. Coat cauliflower with cooking spray; toss with breadcrumb mixture.
