Ingredients

  • 0.3 teaspoon pepper black
  • teaspoons coriander seeds crushed
  • 0.5 cup parsley fresh chopped
  •  garlic cloves halved
  • 0.3 cup green onions thinly sliced
  • 0.5 cup yogurt plain low-fat
  • pounds red potatoes red quartered
  • 0.8 teaspoon salt 
  • tablespoon Stone-Ground Mustard 
  • tablespoon vegetable oil

Directions

  1. Preheat oven to 40
  2. Combine the first 5 ingredients in a large bowl, tossing mixture to coat.
  3. Place the potato mixture in a shallow roasting pan.
  4. Bake at 400 for 30 minutes or until tender, stirring mixture occasionally. Cool to room temperature.
  5. Combine the parsley, yogurt, green onions, salt, and black pepper in a large bowl.
  6. Add the cooled potato mixture, and toss gently.
  7. Serve salad at room temperature or chilled.
  8. Garnish with green onion, if desired.
