Ingredients

  • 0.3 cup brandy 
  • 0.5 cup brown sugar packed ()
  • 0.5 cup golden raisins 
  • 0.8 cup maple syrup pure
  • 0.5 cup raisins 
  • 0.3 cup butter unsalted ()
  • 1.5 cups walnut pieces toasted
  • pounds cubes red-skinned sweet potato peeled cut into 3/4-inch cubes (red-skinned sweet potatoes)

Directions

  1. Combine brown raisins, golden raisins, andbrandy in small bowl; toss to blend.
  2. Letsoak at least 30 minutes and up to 1 hour.
  3. Cook yams in large pot of boiling saltedwater until just barely tender, about 8minutes. Using large slotted spoon, transferyams to baking sheet to cool.
  4. Meanwhile, bring 3/4 cup maple syrup,1/2 cup brown sugar, and 1/4 cup unsaltedbutter to boil in heavy medium saucepanover medium heat, stirring until brownsugar dissolves. Boil 2 minutes.
  5. Butter 15x10x2-inch glass baking dish.
  6. Drain raisins (reserve brandy for anotheruse).
  7. Place raisins in very large bowl.
  8. Addcooked yams, then maple syrup mixture andtoasted walnut pieces. Toss gently to coatevenly, being careful to keep yams intact.
  9. Transfer yam mixture to prepared bakingdish. DO AHEAD: Can be made 2 hours ahead.
  10. Let stand at room temperature.
  11. Preheat oven to 350°F.
  12. Bake yamsuncovered until syrup is thick and bubbling,basting occasionally, about 55 minutes.
  13. Letstand 10 minutes and serve.
