Ingredients

  • 0.3 cup basil chopped
  •  cucumber diced english seeded
  • 0.3 cup flat-leaf parsley chopped
  •  garlic cloves minced
  •  bell pepper diced green seeded
  • tablespoons juice of lime 
  •  bell pepper diced red seeded
  • 0.3 cup red wine vinegar 
  • servings salt and pepper 
  •  onion sweet finely chopped (such as Vidalia)
  • large tomatoes diced seeded
  • cups spicy mixed-vegetable juice (such as V8)

Directions

  1. Mix cucumber, tomatoes, bell peppers, onion, garlic, vinegar, lime juice, vegetable juice, salt and pepper in a large bowl.
  2. Transfer half of mixture to a food processor or blender, process until smooth and return to bowl. Stir well.
  3. Stir in basil and parsley; chill for at least 2 hours to let flavors develop. Season with additional salt, if desired.
