Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • teaspoons brown sugar 
  • tablespoons cider vinegar 
  • 0.8 pound fingerling potatoes 
  • teaspoon garlic minced
  • 0.3 cup green onions sliced
  • teaspoons dijon 
  • 0.1 teaspoon kosher salt 
  • tablespoon olive oil 
  • slices center-cut bacon

Directions

  1. Place a saucepan filled two-thirds with water over high heat.
  2. Cut potatoes into 1-inch pieces.
  3. Add potatoes to pan; cover and bring to a boil. Reduce heat to medium-high; cook 5 minutes or until tender.
  4. Drain.
  5. Cook bacon over medium-high until crisp; crumble.
  6. Add olive oil to drippings in pan. Return pan to medium-high.
  7. Add brown sugar, minced garlic, and Dijon; cook 1 minute.
  8. Add vinegar; bring to a boil.
  9. Remove from heat; stir in pepper and salt.
  10. Combine sugar mixture, potatoes, and green onions. Top with bacon.
