  • cup brown sugar packed
  • 0.8 cup butter softened
  • teaspoon vanilla 
  •  eggs 
  • cups flour all-purpose
  • 0.5 teaspoon baking soda 
  • 0.5 teaspoon ground ginger 
  • 0.5 cup candied ginger finely chopped
  • tablespoons granulated sugar

Directions

  1. Heat oven to 375°F. In large bowl, beat brown sugar, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and gingers.
  2. Shape dough by rounded teaspoonfuls into 1-inch balls.
  3. Place about 2 inches apart on ungreased cookie sheet. Flatten to 1/2-inch thickness with greased bottom of glass dipped in granulated sugar.
  4. Bake cookies 8 to 10 minutes or until edges are set.
  5. Remove from cookie sheet to wire rack; cool.
