Ingredients

  • tablespoon canola oil 
  • teaspoons sesame oil dark
  • large eggs lightly beaten
  • tablespoons ginger fresh peeled chopped
  • tablespoons garlic minced
  • 0.3 cup green onions chopped
  • tablespoons soya sauce low-sodium
  • cups thinly onion vertically sliced
  • 0.3 teaspoon salt 
  • cups short-grain rice chilled cooked

Directions

  1. Heat grapeseed oil in a large nonstick skillet over medium heat; add ginger and garlic. Cook 10 minutes or until browned and crisp, stirring constantly.
  2. Remove from pan; set aside.
  3. Add sliced onion to pan; reduce heat to medium-low. Cover and cook 10 minutes or until soft; stir occasionally.
  4. Sprinkle salt over onion; increase heat to medium-high.
  5. Add rice; cook 4 minutes or until heated, stirring frequently.
  6. Make a well in center of rice; add eggs, stirring to scramble. Gradually incorporate eggs into rice; stir in ginger mixture, green onions, soy sauce, and sesame oil.
  7. Garnish with cilantro, if desired.
