Ingredients

  • 0.3 cup candied ginger finely chopped
  •  eggs 
  • 1.3 teaspoons ground cinnamon 
  • teaspoon ground cloves 
  • tablespoon ground ginger 
  • teaspoons juice of lemon 
  • teaspoon lemon zest grated
  • 0.3 cup blackstrap molasses light ()
  • cup powdered sugar 
  • 0.5 cup shortening 
  • pouch sugar cookie mix betty crocker® (1 lb 1.5 oz)

Directions

  1. Heat oven to 375°F. In large bowl, stir cookie ingredients until very soft dough forms (dough will be sticky).
  2. On ungreased cookie sheets, drop dough with 1 tablespoon-size cookie scoop or by tablespoonfuls about 2 inches apart.
  3. Bake 8 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
  4. In small bowl, stir powdered sugar, lemon peel and lemon juice until smooth.
  5. Spread glaze on cookies.
  6. Sprinkle with crystallized ginger.
