  • teaspoon ginger fresh grated
  •  garlic cloves minced
  • 0.3 cup juice of lime fresh
  • teaspoons lime rind grated
  • servings lime wedges 
  • tablespoon olive oil 
  •  onion red cut into pieces
  • 0.3 teaspoon salt 
  • pound shrimp deveined peeled
  •  bell pepper green yellow cut into 1-inch pieces

Directions

  1. Combine first 6 ingredients in a bowl.
  2. Thread shrimp, tomatoes, onion, and bell pepper on 4 (12-inch) skewers.
  3. Place kebabs in a shallow dish; brush with marinade. Cover and refrigerate 1 hour.
  4. Remove kebabs from marinade, and discard marinade. Grill kebabs over high heat (400 to 50
  5. to 6 minutes or just until shrimp are opaque, turning once.
  6. Sprinkle with salt and serve with lime wedges and Grilled Flank Steak and Cilantro Butter.
