Ingredients

  • cup ginger peeled coarsely chopped
  • 1.5 tablespoons lime zest ( 3 limes)
  • 1.5 cups sugar 
  • cups water 

Equipment

  • food processor
  • sauce pan
  • sieve

Directions

  1. Process sugar, ginger, and lime zest in a food processor 15 seconds.
  2. Transfer to a small saucepan, and stir in water. Cook over medium heat 10 minutes.
  3. Remove from heat, and let stand 10 minutes.
  4. Pour through a fine wire-mesh strainer, discarding solids.
