Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • pound cornish game hens 
  • teaspoon cornstarch 
  • 0.5 teaspoon mustard dry
  • Dash ground pepper red
  • teaspoons juice of lemon 
  • 2.5 tablespoons madeira wine 
  • tablespoons butter melted
  • tablespoon orange juice unsweetened
  • 0.3 teaspoon orange rind grated
  • 0.3 cup currant jelly red
  • 0.5 teaspoon salt 
  • 1.5 teaspoons water 

Equipment

Directions

  1. Remove giblets from hens; reserve for another use. Rinse hens under cold running water, and pat dry. Split each hen in half lengthwise, using an electric knife.
  2. Place hens, cut side down, on rack of a broiler pan coated with cooking spray.
  3. Combine jelly and next 9 ingredients in a small saucepan; stir well. Bring to a boil, stirring constantly. Cook, stirring constantly, 1 minute.
  4. Remove from heat, and set aside.
  5. Sprinkle hens with 1/2 teaspoon salt and black pepper.
  6. Brush with melted margarine.
  7. Bake, uncovered, at 350 for 20 minutes.
  8. Brush hens with half of jelly mixture.
  9. Bake an additional 45 to 50 minutes or until done, basting frequently with remaining jelly mixture.
  10. Transfer hens to a serving platter. If desired, serve with wild rice and garnish with fresh herbs.
