  • tablespoon double-acting baking powder 
  • 0.3 cup candied ginger finely chopped
  • cups powdered sugar 
  • 2.3 cups flour all-purpose
  • 0.3 cup granulated sugar 
  • 1.5 cups cup heavy whipping cream 
  • 0.3 cup juice of lemon fresh
  • teaspoons lemon zest finely grated
  • 0.5 teaspoon salt

Directions

  1. Preheat the oven to 375 and line a baking sheet with parchment paper. In a bowl, whisk the flour with the granulated sugar, baking powder, lemon zest and salt. Using a wooden spoon, stir in the cream and 2 tablespoons of the lemon juice; fold in the candied ginger.
  2. On a lightly floured work surface, gently knead the dough just until it comes together. Pat into a 9-inch round, a scant 1/2 inch thick.
  3. Cut the dough into 8 wedges and arrange them 1 inch apart on the prepared baking sheet.
