  • tablespoons all purpose flour gluten-free
  • teaspoon almond extract 
  • 0.5 cup almond flour 
  • teaspoons double-acting baking powder 
  • 0.3 cup dairy-free margarine melted
  • cup so delicious dairy free vanilla almond plus almondmilk 
  • 0.5 cup evaporated cane juice 
  • teaspoon ground cinnamon 
  • tablespoon fresh-squeezed lemon juice 
  • 0.5 teaspoon salt 
  • cup sorghum flour 
  • 0.5 cup tapioca flour 
  • cups tart apples cored peeled thinly sliced (Granny Smith, Braeburn or Jonagold)
  • teaspoon vanilla extract 
  • 1.5 teaspoons xanthan gum

Directions

  1. Combine dry ingredients in a medium bowl.
  2. Combine almond milk, margarine, and vanilla extract in small bowl.Slowly add wet to dry while stirring. Do not over mix. Stir until just incorporated.Stir apples and lemon juice together.
  3. Add evaporated cane juice, flour, cinnamon, and extracts, and mix together.Preheat oven to 350ºF.Grease an 8×8-inch baking dish.
  4. Pour apple mixture into prepared dish, and drop biscuit topping on top by the spoonful.
  5. Bake for 35-40 minutes or until cobbler is bubbly and topping is golden brown.
