  • teaspoons vegetable oil 
  • lb sirloin beef tips boneless trimmed of fat cut into thin bite-size strips
  • oz canned tomatoes italian-style canned
  • cup beef broth (from 32-oz carton)
  • 0.5 teaspoon pepper red crushed
  • lb bell pepper frozen thawed drained
  • 1.3 cups water 
  • tablespoons butter 
  • 0.5 teaspoon salt 
  • 0.3 cup skim milk fat-free (skim)
  • cup potatoes mashed

Directions

  1. In 12-inch skillet, heat oil over medium-high heat.
  2. Add beef; cook and stir about 5 minutes or until browned.
  3. In medium bowl, mix tomato paste, 1 cup water, the beef broth and red pepper flakes.
  4. Add tomato mixture and stir-fry vegetables to skillet. Cook about 3 minutes, stirring occasionally, until mixture boils. Cook 3 to 5 minutes longer or until vegetables are tender.
  5. Meanwhile, make mashed potatoes as directed on package, using remaining ingredients.
  6. Serve beef mixture over mashed potatoes.
