Ingredients

  • teaspoon baking soda 
  • cup brown sugar packed
  •  eggs 
  • tablespoons granulated sugar 
  • teaspoon ground cinnamon 
  • 0.5 teaspoon ground cloves 
  • teaspoon ground ginger 
  • 0.3 cup blackstrap molasses 
  • 2.7 cups rice flour gluten free all-purpose
  • 0.3 teaspoon salt 
  • 0.8 cup shortening 
  • 0.5 teaspoon xanthan gum

Directions

  1. Heat oven to 350F. In large bowl, mix brown sugar, shortening, molasses and egg with spoon. Stir in remaining ingredients except granulated sugar.
  2. Shape dough by rounded teaspoonfuls into 48 (1-inch) balls.
  3. Roll in granulated sugar.
  4. Place on ungreased cookie sheet 2 inches apart.
  5. Bake 9 to 12 minutes or until set and cookies appear dry.
  6. Let stand 1 minute; remove from cookie sheet to cooling rack.
