Ingredients

  • 300 d gnocchi fresh
  • tbsp olive oil 
  •  to 5 chilies red deseeded sliced
  • medium zucchini with a peeler cut into thin ribbons
  •  spring onion chopped
  •  lemon zest 
  • tbsp mascarpone cheese 
  • 50 parmesan grated (or vegetarian alternative)
  • leaves asian - teriyaki rice mixed

Directions

  1. Cook the gnocchi following pack instructions.
  2. Drain, reserving a ladle of the cooking water, and set aside.
  3. Heat the oil in a frying pan. Cook chilli and courgette for 3 mins until soft.
  4. Add spring onions, zest, mascarpone, half the Parmesan and cooking water.
  5. Mix until smooth, add gnocchi and heat through.
  6. Season, divide between 2 ovenproof dishes and scatter with the remaining Parmesan. Grill for 2-3 mins until bubbling and serve with the dressed mixed leaves.
