  •  cardamom pods 
  • 0.5 cup golden raisins 
  • 1.5 inch lime cut into quarters
  • cups whipped cream low-fat
  • cups pineapple fresh cubed (1-inch)
  • 0.3 cup pistachios chopped
  • 1.5 teaspoons rosewater 
  • 0.3 cup sugar 
  • 0.8 cup water

Directions

  1. Cook lime slices in boiling water 1 minute; drain.
  2. Combine 3/4 cup water, sugar, and cardamom in a medium saucepan. Bring to a boil; cook 1 minute or until sugar dissolves.
  3. Add lime slices to pan; reduce heat, and simmer 10 minutes.
  4. Remove from heat; let stand 1 hour. Discard cardamom pods.
  5. Combine pineapple, raisins, and rose water in a large bowl.
  6. Pour lime mixture over pineapple mixture, and toss gently to combine. Cover and chill up to 24 hours.
  7. Serve with ice cream and pistachios.
