  • 16 oz small-curd cottage cheese 
  •  bacon crumbled cooked
  • 10 large eggs 
  • 0.5 cup flour all-purpose
  • cup mushrooms fresh sliced
  • medium size bell pepper green chopped
  • 0.5 pound sausage meat cooked drained
  • oz monterrey jack cheese shredded
  • 0.3 teaspoon salt

Directions

  1. Melt butter in a large skillet over medium-high heat; add mushrooms and bell pepper, and saut 8 minutes or until tender.
  2. Remove from heat; cool slightly.
  3. Whisk together eggs and next 3 ingredients in a large bowl until smooth. Stir in mushroom mixture, cottage cheese, and remaining ingredients.
  4. Pour into a greased 13- x 9-inch baking dish.
  5. Bake at 400 for 15 minutes. Reduce heat to 350; bake 15 more minutes or until set and lightly browned.
