  • 1.5 teaspoons double-acting baking powder 
  • 0.3 teaspoon baking soda 
  • cup pumpkin canned
  • tablespoons canola oil 
  • 0.8 cup brown sugar dark packed
  • large eggs lightly beaten
  • 5.5 ounces flour all-purpose
  • cup golden raisins 
  • 0.5 cup granulated sugar 
  • 0.3 teaspoon ground cardamom 
  • teaspoon ground ginger 
  • 0.3 teaspoon mace 
  • 0.5 teaspoon salt 
  • 1.5 teaspoons vanilla extract 
  • 0.5 cup walnuts chopped
  • 0.5 cup cornmeal yellow

Directions

  1. Preheat oven to 35
  2. Lightly spoon flour into dry measuring cups; level with a knife.
  3. Combine flour and next 7 ingredients (through mace) in a large bowl; make a well in center of mixture.
  4. Combine sugars and eggs in a medium bowl, stirring with a whisk.
  5. Add pumpkin, oil, and vanilla; stir well.
  6. Add raisins and nuts; add to flour mixture, stirring just until moist. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray.
  7. Bake at 350 for 50 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack, and remove from pan. Cool completely on wire rack.
