Ingredients

  • stick cinnamon (3-inch)
  • teaspoons cornstarch 
  • 1.5 teaspoons ginger fresh grated peeled
  • 1.5 cups golden delicious apple peeled chopped ( 2 apples)
  • 0.5 cup golden raisins 
  • inch julienne-cut lemon rind 
  • 1.5 cups pineapple fresh cubed (1-inch)
  • 0.5 cup mirin sweet
  • 0.3 cup sugar 
  • teaspoons water

Directions

  1. Combine first 6 ingredients in a large saucepan over medium-high heat; add pineapple and apple. Bring to a boil; reduce heat, and simmer 10 minutes or until apples are soft.
  2. Remove from heat. Cover, and let stand 15 minutes.
  3. Remove lemon rind and cinnamon stick. Return fruit mixture to a simmer.
  4. Combine cornstarch and water; stir into fruit mixture. Cook until slightly thick (about 4 minutes).
