1.5 cups golden delicious apple peeled chopped ( 2 apples)
0.5 cup golden raisins
1 inch julienne-cut lemon rind
1.5 cups pineapple fresh cubed (1-inch)
0.5 cup mirin sweet
0.3 cup sugar
2 teaspoons water

Directions
Combine first 6 ingredients in a large saucepan over medium-high heat; add pineapple and apple. Bring to a boil; reduce heat, and simmer 10 minutes or until apples are soft.
Remove from heat. Cover, and let stand 15 minutes.
Remove lemon rind and cinnamon stick. Return fruit mixture to a simmer.
Combine cornstarch and water; stir into fruit mixture. Cook until slightly thick (about 4 minutes).
