Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 0.3 cup chives fresh chopped
  • ounces gorgonzola cheese crumbled
  • 0.7 cup milk 1% low-fat
  • teaspoon olive oil 
  • tablespoons onion red minced
  • 0.5 teaspoon salt 
  • large yukon gold potatoes peeled cut into 1-inch cubes ( 1 1/2 pounds)

Directions

  1. Place potatoes in a medium saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 20 minutes or until potatoes are tender.
  2. Drain; return potatoes to pan. Mash with a potato masher.
  3. Heat oil in a small nonstick skillet over medium heat.
  4. Add onion, and cook 3 minutes or until soft; stir in milk and cheese. Reduce heat to low; cook 4 to 5 minutes or until heated and cheese begins to melt.
  5. Add milk mixture to mashed potatoes. Stir in chives, salt, and pepper.
