If you're looking for a vegetarian, gluten-free, and low FODMAP option that doesn't compromise on taste, you've come to the right place. With just a handful of simple ingredients, you can create a dish that is both comforting and sophisticated.

Parsnips, often overlooked, are the star of this recipe. Their natural sweetness and earthy flavor are beautifully enhanced by the warmth of black pepper and the richness of butter. The process begins with boiling the parsnips until they're tender, then transforming them into golden-brown morsels that are crispy on the outside and soft on the inside. The result is a dish that is not only visually appealing but also packed with nutrients and flavor.

Perfect for family dinners or as a standout side for special occasions, Grama's Peppery Parsnips are sure to impress. With a preparation time of just 40 minutes, you can easily whip up this dish even on busy weeknights. So, gather your ingredients and get ready to savor the comforting taste of home-cooked goodness. Your taste buds will thank you!

Ingredients

  • tablespoon butter
  • servings ground pepper black to taste
  • pound parsnips peeled cut into narrow strips lengthwise cut in half crosswise, and
  • pinch salt

Equipment

  • frying pan
  • paper towels
  • sauce pan

Directions

  1. Place the parsnips into a saucepan, and cover with water. Bring to a boil, turn down the heat, and simmer until parsnips are tender, 15 to 20 minutes.
  2. Drain well, pat the parsnip pieces dry with paper towels, and set aside.
  3. Melt butter in a skillet over medium heat, and place the parsnips into the hot butter in an even layer.
  4. Sprinkle with salt and black pepper (I use quite a bit). Cook parsnips until lightly golden brown on both sides, 5 to 8 minutes per side.
