Ingredients

  • 16 ounce confectioners' sugar 
  • tablespoon milk as needed
  • 0.3 cup peanut butter 
  • small potatoes cubed peeled

Directions

  1. Place potato cubes in a small sauce pan and cover with salted water. Bring to a boil, then reduce heat to medium-low and simmer until tender, about 15 minutes.
  2. Drain and cool.
  3. Mash potato in a large bowl until smooth.
  4. Stir 1 cup confectioners' sugar into mashed potato; mix well. Gradually stir remaining confectioners' sugar and milk to form a firm dough. Incorporate green food coloring at this point if using.
