  • cup garlic cloves peeled
  • pounds russet potatoes 
  • 12 servings salt and pepper white
  • 0.8 cup whipping cream

Directions

  1. Peel potatoes and cut into quarters.
  2. Place potatoes in a 5- to 6-quart pan and add enough water to cover. Cover pan and bring to a boil over high heat, then simmer until potatoes are tender when pierced, 15 to 20 minutes.
  3. Meanwhile, in a 1- to 1 1/2-quart pan over low heat, combine garlic, cream, and butter. Cover and stir occasionally until garlic is tender when pierced, about 10 minutes.
  4. In a blender or food processor, pure garlic mixture.
  5. Drain potatoes, return to pan, and add garlic pure. Mash with a potato masher or mixer until smooth.
  6. Add salt and pepper to taste.
