  • tablespoons butter chilled cut into small pieces
  • large egg yolks 
  • 0.7 cup grapefruit juice fresh
  • tablespoons juice of lemon fresh
  • teaspoons grapefruit rind grated ( 2 grapefruit)
  • 0.5 cup sugar

  • double boiler

Directions

  1. Combine first 5 ingredients in the top of a double boiler, stirring well with a whisk. Cook over simmering water until thick (about 10 minutes), stirring constantly. Strain juice mixture through a fine sieve into a bowl; discard solids.
  2. Add butter, stirring well with a whisk. Cool completely.
