Ingredients

  • tablespoon plus light
  •  egg whites 
  • 0.3 cup grapefruit juice freshly squeezed
  • tablespoon grapefruit rind grated
  • 0.1 teaspoon salt 
  • 1.5 cups sugar 

Equipment

  • double boiler

Directions

  1. Combine first 5 ingredients in top of a double boiler. Beat at low speed 30 seconds or just until blended.
  2. Place over boiling water; beat at high speed 7 minutes or until stiff peaks form.
  3. Remove from heat.
  4. Add grapefruit rind; beat 1 to 2 minutes or until frosting is thick enough to spread.
  5. Spread immediately on cooled cake.
