Ingredients

  • ounces baby spinach 
  • 0.5 cup cooking wine dry white such as pinot grigio
  • ounces feta cheese crumbled
  • tablespoon garlic minced
  • cup kalamata olives pitted halved
  • 0.5 teaspoon kosher salt 
  • tablespoons olive oil 
  • cup onion chopped
  • 0.5 teaspoon pepper 
  • cup pinenuts toasted
  • 0.5 teaspoon chile flakes red
  • cups rotisserie chicken cut shredded
  • ounces pasta like spaghetti

Directions

  1. Cook spaghetti as package directs.
  2. Heat oil in a large frying pan over medium heat.
  3. Add onion and garlic and cook until softened, about 5 minutes. Stir in spinach, wine, chile flakes, olives, pine nuts, salt, and pepper.
  4. Drain pasta, return to pot, and add onion mixture and chicken. Stir to coat and cook over medium heat until warmed, about 4 minutes.
  5. Transfer to plates and top with feta cheese.
