Ingredients

  • 0.3 cup firmly brown sugar packed
  •  garlic clove thinly sliced
  • 0.3 teaspoon garlic salt 
  • 0.3 cup honey 
  • 0.3 cup juice of lemon fresh
  • teaspoon lemon rind grated
  • teaspoon mint flakes dried
  • 1.5 pound lamb rib roast trimmed
  • 0.3 cup walnuts finely chopped

Directions

  1. Make 1-inch-deep cuts in lamb, and insert garlic slices.
  2. Place lamb in a shallow roasting pan.
  3. Bake at 325 for 1 hour.
  4. Stir together honey and next 3 ingredients in a small saucepan; cook over low heat until bubbly, stirring until sugar dissolves.
  5. Remove from heat, and stir in lemon rind, mint, and walnuts.
  6. Spoon lemon glaze over lamb; bake 30 more minutes or until a meat thermometer inserted into thickest portion registers 155 or to desired degree of doneness, basting occasionally with glaze.
  7. Serve lamb immediately.
