  • 14 ounce artichoke hearts drained coarsely chopped canned
  • ounces feta cheese with basil and sun-dried tomatoes crumbled
  • 0.3 cup parsley fresh chopped
  • cup grape tomatoes halved
  • 0.1 teaspoon ground pepper red
  • 0.3 teaspoon coarsely ground pepper black
  • tablespoons juice of lemon 
  • teaspoon oregano dried
  • ounces orzo pasta) (rice-shaped uncooked

  • 1.3 pounds shrimp deveined peeled

Directions

  1. Cook pasta according to package directions 6 minutes, omitting salt and fat.
  2. Add shrimp, and cook 3 minutes or until shrimp are done.
  3. Drain well.
  4. Combine artichokes and remaining ingredients in a large bowl.
  5. Add shrimp and pasta; toss gently. Cover and chill 10 to 15 minutes.
