  • cups baby spinach leaves 
  • cup feta cheese divided crumbled
  • cloves garlic minced
  • 0.3 cup kalamata olives pitted coarsely chopped
  • 0.5 cup mayonnaise 
  • 0.5 cup oil-packed sun-dried tomatoes coarsely chopped
  • tablespoon oil from the sun-dried tomatoes 
  • teaspoon oregano dried
  • 12 inch pre-baked pizza crust italian
  • 0.5 small onion red halved thinly sliced

Directions

  1. Adjust oven rack to lowest position, and heat oven to 450 degrees.
  2. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl.
  3. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano.
  4. Bake until heated through and crisp, about 10 minutes.
  5. Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer.
  6. Cut into 6 slices and serve.
