  • 10 oz european cucumber peeled sliced
  • cup feta cheese crumbled
  • tablespoons parsley fresh chopped
  • cup kalamata olives drained
  • tablespoons olive oil extra-virgin
  • 0.3 teaspoon pepper 
  • small onion red sliced in rings
  • tablespoon red wine vinegar 
  • 0.3 teaspoon salt 
  • small tomatoes ripe cut into wedges

  1. In a medium salad bowl, toss together tomato, cucumber, onion, oil and vinegar.
  2. Sprinkle with parsley, salt and pepper. Toss again.
  3. Transfer to bowls and top with olives and feta.
