  •  cherry tomatoes thinly sliced
  • 0.5 cup cucumber thinly sliced
  • tablespoons feta cheese crumbled
  • 0.8 cup mushrooms fresh thinly sliced
  • clove garlic minced
  • leaf lettuce leaves green
  • ounces low-salt ham thinly sliced reduced-fat
  • tablespoons olives ripe sliced
  • 0.1 teaspoon oregano dried
  • ounce submarine rolls 
  • ounces turkey breast cooked thinly sliced
  • tablespoon balsamic vinegar white

Directions

  1. Combine first 8 ingredients in a small bowl; toss gently.
  2. Let stand 30 minutes, tossing occasionally.
  3. Cut a thin slice off top of each roll; discard slices. Set tops aside.
  4. Cut a 2-inch-wide, V-shaped wedge down length of each roll. Reserve bread wedges for another use.
  5. Drain vegetable mixture. Line each roll with a lettuce leaf; top evenly with ham and turkey. Spoon vegetable mixture evenly over meat; cover with bread tops.
