  • 0.3 cup olives black sliced
  • small cucumber english chopped
  • ounces tomato basil feta cheese crumbled
  • clove garlic minced
  •  bell pepper green sliced
  • teaspoon juice of lemon 
  • 0.3 cup olive oil 
  • small onion chopped
  • 0.5 teaspoon oregano dried
  • teaspoon red wine vinegar 
  •  roma tomatoes chopped (plum)
  • servings salt and pepper to taste

Directions

  1. In a salad bowl, combine the tomatoes, bell pepper, cucumber, onion and olives.
  2. Whisk together the oil, vinegar, lemon juice, garlic, oregano, salt and pepper.
  3. Let sit for 1 hour, occasionally stirring to blend flavors.
  4. Pour dressing over salad, add feta cheese and toss before serving.
