  • 14 ounce artichoke hearts drained quartered canned
  • 0.5 cup chicken broth 
  • ounces feta cheese crumbled
  • 0.3 cup kalamata olives pitted halved
  • tablespoon juice of lemon fresh
  • teaspoon lemon rind grated
  • tablespoons olive oil 
  • 1.5 tablespoons oregano fresh chopped
  • 12 ounces orzo pasta uncooked
  • teaspoons greek seasoning 
  • 1.5 pound snapper fillet boneless skinless cut into 4 pieces
  • 0.5 cup white wine

Directions

  1. Cook orzo in boiling salted water according to package directions; drain and keep warm.
  2. Sprinkle Greek seasoning over both sides of fish fillets.
  3. Heat oil in a large skillet over medium-high heat.
  4. Add fish; cook 2 to 3 minutes on each side or until almost done.
  5. Add artichoke hearts and next 5 ingredients. Bring to a boil; reduce heat and simmer, uncovered, 5 to 7 minutes or until fish flakes with a fork.
  6. Spoon orzo into a serving dish, and top with snapper and artichokes.
  7. Sprinkle evenly with feta and olives.
