Ingredients

  • 15 ounce chickpeas rinsed drained canned (garbanzo beans)
  • 1.5 cups cucumber sliced ( 1 medium)
  • 0.3 cup feta cheese crumbled
  •  garlic cloves minced
  • teaspoons olive oil 
  • 0.5 teaspoon oregano dried
  • 1.5 cups plum tomatoes chopped ( 5)
  • 0.3 cup red wine vinegar 
  • cups torn spinach loosely packed
  • tablespoon water

Directions

  1. Combine first 5 ingredients, stirring well with a whisk.
  2. Combine chickpeas, cucumber, and tomato in a large bowl; add vinegar mixture, tossing well.
  3. Add spinach and feta cheese; toss salad gently.
  4. Sprinkle salad with pepper, if desired.
