  • cloves garlic minced
  • Tbsp lemon zest grated
  • cups minute rice white uncooked
  • Tbsp oil 
  • 0.3 cup olives pitted ripe sliced
  • Tbsp parsley flakes 
  • lb chicken breasts boneless skinless cut into strips

Directions

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add chicken; cook and stir 6 to 8 minutes or until chicken is cooked through, adding garlic for the last 3 minutes of the cooking time.
  3. Add remaining ingredients; stir until well blended. Bring to boil; cover.
  4. Remove from heat.
  5. Let stand 5 minutes.
