Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • teaspoons olive oil extravirgin
  • ounces feta cheese crumbled
  • 0.5 cup basil fresh thinly sliced
  • 0.8 pound green beans trimmed
  • 0.5 teaspoon salt 
  • tablespoon sherry vinegar 
  • cups tomatoes chopped
  • cups water 
  • 0.8 pound turtle beans trimmed

Directions

  1. Bring 4 cups water to a boil in a medium saucepan. Cook the beans in boiling water for 5 minutes or until crisp-tender.
  2. Drain and rinse with cold water; drain.
  3. Combine tomato and next 4 ingredients (through pepper) in a bowl. Divide beans evenly among 8 plates. Top each serving with 1/4 cup tomato mixture.
  4. Sprinkle each serving with 1 tablespoon sliced basil and 1 tablespoon cheese.
