Ingredients

  • slices bacon 
  • 0.5 teaspoon pepper black freshly ground
  • tablespoon dijon mustard 
  • pounds green beans trimmed
  • tablespoon honey 
  • 0.3 teaspoon kosher salt 
  • 0.3 cup red wine vinegar 
  • tablespoons shallots finely chopped

Directions

  1. Cook beans in boiling water 5 minutes.
  2. Drain and plunge beans into ice water; drain.
  3. Place beans in a large bowl.
  4. Cook bacon in a large nonstick skillet over medium heat until crisp.
  5. Remove bacon from pan, reserving 1 teaspoon drippings in pan. Crumble bacon; set aside.
  6. Add shallots to drippings in pan; cook 1 1/2 minutes, stirring frequently.
  7. Add vinegar; cook 30 seconds, scraping pan to loosen browned bits.
  8. Drizzle mixture over beans.
  9. Combine honey, mustard, pepper, and salt, stirring with a whisk.
  10. Pour over green bean mixture; toss to coat.
  11. Sprinkle with crumbled bacon.
